Menu Plan Monday + Chicken Pasta Recipe

It’s the week after Christmas and I have a ton to get done. But it’s going to be a very good week. I have nothing to do outside of the home this week other than a babysitting job, and an audition with my sister. I’m really looking forward to being able to do all the cooking in the house this week. So I did my menu planning and then went out to shop. Which was followed by a wonderful evening at home, filled with movies video games and friends.

Monday – Chicken Pasta (My recipe, at the end of this post), and Whole Grain French Baguette

Tuesday – BBQ Pulled Pork Sandwiches, and Mama’s homemade Mac and Cheese

Wednesday – Pork and Pineapple Stirfry

Thursday – Taco Casserole and Corn (Family Favorite) /eating out

Friday – Eating out/ taco casserole

For the weekend I will be spending time with my dad and brother.

 

Chicken Pasta

This recipe is VERY good, but I will say, that when I make it, I make it by eyeing it, and tasting it. So while these are measurements, they are not 100% accurate, it varies every time.

Chicken Breast/tenderloin ( for my family i get 3 chicken breasts and dice them)

Olive Oil

1 or 2 cloves of Garlic

1/2 white/yellow onion

1 Red Pepper

1 Green Pepper

1 Can of Tomatoes

Whole Grain Spaghetti Noodles

1 Can of Chicken Broth

A few splashes of vinegar

1 tsp. Cayann Pepper

Salt and Pepper to taste

I throw the garlic in a skillet along with some  olive oil and let that cook up a bit, and I then add the onion. After those cook up I add the peppers quickly followed by the chicken, keeping enough oil to cook it and keep it moist. While thats cooking I start cooking the noodles. After the chicken is completely cooked I pour in my chicken broth, tomatoes, vinegar, and seasonings. I let that come to a boil and then after draining the noodles I pour this mixture over the noodles. Boy is it good!!!!
