I hope everyone had a great weekend! I know we did! Friday evening consisted of relaxing, and video games along with experimenting with some coffee. We made a honey latte that was delicious. I hope to share the details of that soon! Saturday consisted of lots of cleaning in anticipation of my starting school this week, and Matt’s aunt and uncle came to visit! It was nice having Sunday for just church and relaxation since there was nothing really to work on!
This Monday has been a crazy one already! Early morning DMV, Walmart, grocery store, dealing with some school things, catching up on weekend dishes and the list goes on! But thankfully I have all of my meals planned for the week so it definitely helps! The meals for this week are quite simple because I am a little nervous about the adjustment from just being a wife to being a wife and student. We shall see how this goes!
So here are our meals for the week! I’m joining Organizing Junkie for her Menu Plan Monday !! Also, I would like to add as I was typing this waiting for our dinner to cook I realized I totally made tonight’s meal wrong. oops. It was supposed to be chicken enchiladas, but I am so used to using beef that is just what I grabbed out of the fridge!
Monday: Beef Enchiladas
Tuesday: Sloppy Joes and French Fries – This will probably be tossed in the crock-pot because I have a meeting at 7 and husband gets out of class at 6:30
Wednesday: Margherita Pizza – This is from the Kroger deli and I am pretty excited to try it.
Thursday: Chicken Parmesan – This recipe is heavenly and delicious so basically, you should try it.
Friday: Basically I have no idea right now. We might pull something together, or if we don’t make on of the other meals this week we will make it then.
Saturday: Sister’s Birthday Party! – I will share more on this next week:) I don’t want to spoil any surprises!
Sunday: Simple Cheesy Beef Pasta (aka Hamburger Helper;), Cheesy Garlic Biscuits, and some veggie, maybe I will roast some brussel sprouts.
Short, sweet and to the point! Hopefully I don’t pull my hair out trying to balance our schedules this week! Wish me luck!
Also, is anybody else completely ready for fall? I can smell it in the air and I am ready! I am actually curled up on the couch eating a Pumpkin Delight. If you don’t know what they are then you are missing out. I hate pumpkin pie, but put pumpkin in almost anything else and I will come running!
