It’s Monday so that means it’s time to look at what we are eating!
Last week went MUCH better than the week before. There weren’t quite as many failures as last time. Tuesday’s dinner was delicious. This is our favorite meal to have and while it’s typically pretty good, I nailed it last week. We ate every last bite of it! Wednesday I mixed up some chicken salad to eat for lunch. It was super simple. I boiled some chicken, chopped up some celery, almonds, green onions, grapes, and threw in some Craisins. I tossed the chicken into my KitchenAid Mixer to shred it (a great idea!), then threw everything else as well as some organic mayo into the mixer and voila! Lunch! It was great. I didn’t actually make fajitas for dinner, because we snuck to Charleston to surprise my mom for her 50th birthday. Thursday I decided to make enchiladas instead of lasagna which I think was a good choice. Friday I attempted some NY Style pizza. It was so good. Nothing like NY Style Pizza, but delicious nonetheless. Overall, it was a pretty successful week!
This week is another crazy busy one, but here are our dinner plans for the week
Monday – Out @ Panera. We picked up some coupons for there this weekend so we are looking forward to using them!
Tuesday – Spaghetti (Made with organic DELICIOUS sauce & pasta), Salad, and Garlic Bread
Wednesday – Fajitas and Fried Potatoes
Thursday – Grilled Chicken (On the George Foreman), Roasted Veggies (Squash, Zucchini, & Broccoli), and sweet potato fries
Friday – Calzones — I have been enjoying eating pizza every week, but I need a little change up!
