Last week I challenged myself to eat on $50 or less for the week. Our grocery bill was $44, although I did have stuff for Monday’s dinner already at home. My biggest concern after successfully completing that grocery trip was how many times I would have to go back to the store that week. The only thing I forgot to get was Craisins for our Picadillo. I was shocked that I didn’t forget a million other things. Friday night we did end up ordering pizza though. I was tired of cooking and knew I didn’t want to make pizza, so we ordered some. But honestly, I would say this week was a total success.
Now it’s time to see if it was beginners luck, or if I can actually pull this off! This week I spent $45 at the grocery store, with 1 splurge and 1 longer term investment that will last a while. I do still have a little bit of meat to buy, so I didn’t completely succeed, but it was really close. There is still a ton to learn and I’m sure it will get better. Monday: Poor Man’s Meal – Fried Bologna, Mashed Potatoes and Mac and Cheese. This meal is embarrassing, and I honestly didn’t want to share it. It’s cheap, processed junk, but it is delicious!
Tuesday: Black Bean and Cheese Quesadillas
Thursday: Pork Chops, Mashed Potatoes, and whatever fresh veggies are on sale (This is our splurge meal for the week)
Friday: Veggie Calzones
Saturday: Out with visiting family
Sunday: Chicken Tacos/Taco Salad
