Monday has arrived and brought with it a fresh new slate. Despite hating Mondays for obvious reasons, I have always secretly loved them. They bring new chances and a fresh start every week. Last week was a doozy on the menu planning side of things and I am so thankful for a new Monday to try everything again. Last week I didn’t menu plan or grocery shop and it left me in quite the mess. We went to the store about a million times and ate out far too much. I plan to redeem myself this week even if it kills me!

Monday – Meatloaf (Father-in-law’s recipe), Mashed potatoes, and Green Beans. As mentioned, I didn’t exactly cook this week so I really need to start the week out on the right foot. Yay for comfort food!
Tuesday – Chicken Parmesan and Garlic Bread
Wednesday – Taco Salad (Taco meat, lettuce, refried beans, onion, fresh tomatoes, sour cream, drop of ranch dressing, cheese and a few crushed Doritos. Basically heaven on earth)
Thursday – Veggie Pizza
Friday – Picadillo (Favorite cuban dish)
Saturday – Pantry Raid/Meal make-up/out
Sunday – Italian Chicken, Corn, and Baked Potatoes
That’s it for this week! I’m pretty proud of the variety of foods (american, italian, mexican, cuban etc.) It will be a good week for sure! Enjoy your Monday!
