The beginning of a new week is so exciting to me. I know I’m supposed to hate Monday, but I have such a hard time doing that. It’s like hating the first day of school, or the beginning of a new year (two things I absolutely love). While of course I ache for a slightly longer weekend, the thought of having a fresh chance at having a good week is exhilarating. Although, I think I’m getting a bit deep for a Monday morning. Time to get down to business. (I would like to note, I typed this paragraph on Sunday. It’s Monday morning. I lied. Okay, maybe not, but shew it is hard to have a good outlook on Monday before noon)
As usual I want to share our menu for the week with you. As I have mentioned previously, we are about to have some major lifestyle changes in our home specifically revolving food. We are easing in this week, because I figured such a harsh change from our vacation food intake would not be easy. The real change will hopefully occur next week. I can’t wait to share with you all how we work through these changes.

Monday: Ground Turkey & Black Bean Enchiladas with Cheesy Salsa Beans
Tuesday: Lemon Butter Double Stuffed Chicken, Roasted Broccoli, and Mashed Potatoes
Thursday: Potato Soup and Salad
Friday: Homemade Pizza
Saturday: Pantry Raid//Make-up Meal//Out (I like to leave one night a week to either eat out, or use up leftovers. I find this helps decrease our food waste that would occur if I planned 7 meals a week)
Sunday: Italian Chicken, Baked Potatoes, Corn and Rolls
It’s nothing too fancy this week, but some of our absolute favorites before everything changes soon and we learn to adapt these meals! Have a good Monday!
