Happy Labor Day! I am enjoying having a Monday off, but I know it will be over all too quickly. I’m trying to embrace it while I can and I hope to find a balance between relaxing and productivity today. I hope you all enjoy your holiday as well!
We have been attempting to eat well, and I have to admit it’s not going too wonderfully so far. Our dinners are pretty good and we are set as long as the new trial recipe works. If it fails, we are screwed and find ourselves without any back-up food and running through a drive-thru. Breakfast and lunch have been particularly challenging for me as well, I’m a bit too picky and don’t want to spend a ton of time prepping a meal. I would love any tips regarding your favorite breakfasts and lunches. I also think I’m going to try to put together a few freezer meals in the next week or two to help combat those busy days and failed meals. I’m trying to keep my chin-up though and I know that eating better is helping us, even if its falling apart half the time. So here is to another week of attempts!

MONDAY – Lemon Garlic Double Stuffed Chicken, Roasted Veggies, and Mashed Potatoes (I have time to prep and eat tonight which is rare on a Monday)
TUESDAY – Chicken Alfredo Baked Ziti
WEDNESDAY – Taco Salad
THURSDAY – Burgers and Sweet Potato Fries
FRIDAY – Veggie Pizza (My favorite pizza crust, with honey instead of sugar)
SATURDAY – OUT to celebrate a family birthday
SUNDAY – Spaghetti and Salad (Sunday dinner with Friends)
Hopefully this week is simple enough that I can actually stick to it. Now If I could just figure out some breakfast and lunches I would be set! Have a great week.
