Menu Plan Monday // Twenty

This weekend was such a blur of excitement and exhaustion. I have a new sister and niece and my brother is a very happy and blessed man. We so enjoyed celebrating their marriage and spending time with family. I hope to write a bit more on this soon. We got in late last night and went straight to bed after getting home. The house needs cleaned, laundry needs done, and groceries desperately need to be bought, but before that, menu planning. First, a picture of our awesome family partying with my brother on his wedding day!


As usual I will be linking up with the Organizing Junkie for my Menu this week. Also, I really hope to make this post a bit more exciting in the future, but for now you are stuck with a simple menu from me!


Monday – Spaghetti (This was planned ahead of time knowing we wouldn’t get to grocery shop before this!)

Tuesday – Garlic Yogurt Chicken with Roasted Veggies and Mashed Potatoes

Wednesday – Chicken Tacos

Thursday – Hamburgers and Sweet Potato Fries

Friday, Saturday, and Sunday I will be out of town. I hope to leave husband a few meals ready to go so he won’t starve to death, but I’m honestly not quite sure what those will be yet. Maybe I can make a post on that later. Any tips for good meals to leave behind for your spouse? I would love some ideas!

This week is about surviving…but hopefully preparing for exiting survival mode as soon as possible. I so enjoy these weekends away, but at the same time they leave me getting very little done! The meals are simple but will hopefully give me more time during the week to get our lives back into shape.

  1. love the sweet potato fries with the burgers! I might have to try that!!
    if you pre-cook chicken, cut it into bite-size pieces, toss it with spices, and freeze it, all he would have to do is defrost it and heat it up in a pan 🙂
    I do that during the week for my own meals 😉


  2. What a delicious-looking menu! My husband and I have always wanted to start having a regular burger night so that we can try different burger recipes. My favorite burger nights always include sweet potato fries. 🙂
