This weekend was such a blur of excitement and exhaustion. I have a new sister and niece and my brother is a very happy and blessed man. We so enjoyed celebrating their marriage and spending time with family. I hope to write a bit more on this soon. We got in late last night and went straight to bed after getting home. The house needs cleaned, laundry needs done, and groceries desperately need to be bought, but before that, menu planning. Monday – Spaghetti (This was planned ahead of time knowing we wouldn’t get to grocery shop before this!)
Tuesday – Garlic Yogurt Chicken with Roasted Veggies and Mashed Potatoes
Wednesday – Chicken Tacos
Thursday – Hamburgers and Sweet Potato Fries
Friday, Saturday, and Sunday I will be out of town. I hope to leave husband a few meals ready to go so he won’t starve to death, but I’m honestly not quite sure what those will be yet. Maybe I can make a post on that later. Any tips for good meals to leave behind for your spouse? I would love some ideas!
This week is about surviving…but hopefully preparing for exiting survival mode as soon as possible. I so enjoy these weekends away, but at the same time they leave me getting very little done! The meals are simple but will hopefully give me more time during the week to get our lives back into shape.
