Menu Plan Monday // Twenty One

What a whirlwind weekend. I got to spend some time with my Momma as well as my grandpa and other family. I so loved being able to get away for the weekend but hate the Monday following a weekend away. There is so much to do to play catch-up, grocery shopping, house cleaning, and especially sleeping. I think its going to be a great week, despite playing catch-up. I have work of course, a special date night, a movie night at church, and a special event in Beckley. It’s going to be a great week, even if its going to be a bit busy.

Our menu this week will consist of simple but delicious comfort foods. I’m linking up with Organizing Junkie and all of the wonderful ladies that participate to share our menus.

Monday – White Bean Chili

Tuesday – Garlic Yogurt Chicken, Mashed Potatoes and Roasted Vegetables [didn’t get to this last week]

Wednesday – Meatball Subs w/ Salad

Thursday – Shredded Chicken Quesadillas [leftover chicken taco meat] w/ Potatoes O’Brian

Friday – Church Dinner and Movie Night

Saturday – Beckley Chili Night

Sunday – Spaghetti

  1. How do you have all the groceries for those meals after a weekend away?? We always end up either ordering take out or scrounging through our pantry and fridge to try to put something together. I rely so much on my weekends to get the grocery shopping done!

    • Magic of course! 😉 But I completely rely on the weekend for my menu planning and shopping as well. I picked a meal for Monday that I knew we would have almost everything for and I planned to grocery shop Monday night. That didn’t happen so luckily we had everything for Tuesday’s dinner as well. I’ll be heading to the store this evening to gather things for the rest of the week. This is one of my most hated things about being gone over the weekend, for sure.
