Happy Happy Monday! Hopefully most of you have a short work week this week like I do. There’s just something about starting the week knowing it’s only 4 days long.
This past week did not go without a few bumps and bruises, but over-all it was a pretty successful week. There was a waffle disaster, and I’m not sure I (or the kitchen) have quite recovered. However the meal was salvaged and husband and I spent our Sunday afternoon in a food coma following consuming far too much waffles & bacon. Who decided waffles were an acceptable meal anyways? It was more like eating dessert for lunch. Oh well, I’m not complaining!
This past week I also discovered something. The very last thing I want to do on Fridays when I get off work is make dinner. Most Fridays I find myself begging husband to order pizza or take me out. So I’m going to stop pretending that I will actually head into the kitchen on Friday nights after a full week of work. From here on out, most Friday nights will consist of date night with Husband. What is your go-to date night?

Friday || Breakfast / Out| Lunch / Leftovers | Dinner / Pinot Grigio Chicken, Roasted Veggies, and Mashed Potatoes
Saturday || Independence Day Celebration – To Be Decided
Sunday || Italian Chicken, Baked Potato & Corn
Snacks || Fruit, Veggies, Cheese & Crackers, Popcorn and Granola Bars
